This golden-topped cauliflower cheese dish is perfect comfort food for the colder months, but also for the Christmas table. The bechamel sauce is gluten free because it uses no flour. Instead it used butter beans. You truly cannot tell the difference, and the beans provide more protein.

It can be made vegan by substituting the cheddar cheese and milk for a vegan alternatives.
